Sodium Benzoate is not a full-spectrum preservative.  It requires the use of another preservative such as Potassium Sorbate to provide full protection against mold, fungi, yeast and bacteria.

pH range:  up to 6, but is most active at pH 3, where it is 94% active; at pH 6, it is only approximately 1.55% active.

Usage rate:  up to 1.0%  - Add at 60°C or below during the cool-down stage of processing
